Stir fry meals are quick and delicious, but often times, the pre-made ones have too much sodium and not enough veggies.  This weekend, I was playing in the kitchen and tried a new recipe- stir fry chicken wraps.  I have made Asian chicken wraps and stir frys, so I thought I would combine them together. You can make these easy chicken stir fry wraps at home and your whole family will enjoy it.  All of the different vegetables add a ton of textures and the sauce is the perfect combination of sweet and spicy.

Ingredients

(for the stir fry)
1 lb chicken (cubed)
Salt & pepper to taste
1 Tbl toasted sesame seed oil
2 cloves garlic, minced
1 red bell pepper, diced
1/2 purple onion, diced
10 oz. broccoli/carrot slaw
2 C green beans
8 oz (1 can) water chestnuts

(for the sauce)
1/2 C hoisin sauce
1 Tbl soy sauce
1 tsp ground ginger
1/2 C vegetable broth
1 tsp rice vinegar
1 tsp crushed red pepper

Bundle of collard green leaves
Diced pineapple (optional)

Steps

1. In a large skillet, heat oil and add garlic. 2. Season cubed chicken with salt and pepper and add to skillet. 3. Once chicken is cooked through, add bell pepper, onion, broccoli slaw, and green beans and cook for 5 minutes. 4. Add water chestnuts 5. In a large bowl combine hoisin sauce, soy sauce, ginger, broth, vinegar and red pepper, then add to stir fry mixture. Cook for 3 more minutes, stirring continuously. 6. Serve on collard green leaves with pineapple (optional)

Feel free to adjust the sauces to your liking.  I like mine a little spicier, so I added a bit more crushed red pepper than I listed on the recipe.

My husband likes his with fried rice (as shown in the photo), but I eat mine without.  It is plenty filling because it is full of vegetables. You can also replace the chicken with beef or tofu for a vegan version.

    Wow this looks so good! I love that you added some fresh pineapple to the wraps to give them a bright, citrusy flavor. Yum! Sharing on Pinterest, and adding this to my menu for the week 🙂

      Yes! Swapping the chicken out for vegetarian chicken would be so easy! I am a big fan of the bun (or at the least open faced), but sometimes it’s nice to just lighten it up.
