Easy Sauteed Spinach Recipe

Is there a food that you refused to eat as a kid, but once you got older, it became one of your favorites?  Spinach is that food for me.  I still can’t eat canned spinach, but I am all about fresh spinach. For a few years, I have made sauteed spinach several ways.  This is hands down my favorite way to make it.

Here is a simple sauteed spinach recipe to add some spice to your sides.  This recipe makes two servings, so feel free to double as needed.

Ingredients:

Processed with VSCO with a6 preset

1 Package (4 cups) spinach

1 Tbl. Pine nuts

1 Clove minced garlic

Salt

Pepper

Crushed red pepper

(optional) Lemon

Steps: Processed with VSCO with a6 preset

1. In a large skillet, heat 1 tsp. coconut oil (or whatever oil you fancy).  2. Add pine nuts and garlic 3. When pine nuts begin to brown, add spinach.  4.  After spinach begins to wilt, add salt, pepper, and crushed red pepper to taste.  5. Cook for 1 more minute and take off stove.  6. (Optional) Add a squeeze of lemon.

You can serve the spinach with your favorite protein.  The pine nuts give the spinach a little bit of a crunch, while the garlic and red pepper give it a bit of spice and flavor.  This sauteed spinach recipe is quick and ready in under 7 minutes.

    I always had spinach sauteed with othewr veggies but never alone, and i also love using it in my smoothies its not the best taste but its healthy, great recipe

    I am making this tonight!!! My family doesn’t like spinach but I could eat it for every meal, especially when it’s sauteed. Can’t wait to try this!
