Did you know that it takes more land, fossil fuel and water to produce one pound of animal meat vs one pound of soy?  By reducing the amount of meat we eat, we can help reduce pollution, rain forest destruction, and save water (  Colton and I try to reduce our carbon footprint by eating vegetarian once a week, or “Meatless Mondays”.  Not only do we eat more vegetables, we try new foods and help the planet as well.

Mondays can be difficult, if you don’t plan accordingly.  Since I work full time, I make sure I pack all of my meals the night before.  If you are hesitant about meatless Mondays preparation, don’t be.  Eating vegetarian doesn’t mean you have to spend hours cutting vegetables and meal prepping.  There are a ton of great options out there including MorningStar Farms® Veggie Bowls , and I promise you won’t even miss the meat.  Give this Meatless Monday meal plan a try.

Meal 1 (breakfast)

Options: fruit smoothie, smoothie bowl, or protein pancakes

Meal 2 (morning snack)

Fruit: apple, orange, or grapefruit

Meal 3 (lunch)

These veggie bowls are the perfect lunch for on the go.  I love that I can just throw it in my lunch bag and take it to work.  There are several different flavors to choose from (including Chik’n Pot Pie, Chik’n Tikka Masala, Italian Sausage Bake, Japanese Soba Noodles, and Moroccan Medley), so you don’t have to eat the same thing every time.

Growing up, one of my favorite meals  to eat was chicken pot pie.  Finally, there is a version out there that is low in calories and healthier.  The “chicken” is 100% vegan chik’n strips that are lightly seasoned, low in calories, and full of protein.  It takes just a few minutes to make in the microwave, which is perfect for my limited lunch schedule at school.

I found the chik’n pot pie veggie bowl at Walmart in the freezer section.  There is a separate “vegetarian section” full of MorningStar veggie bowl flavors and favorites.

    I am (mostly) vegetarian. I still eat eggs and fish and I’ve started incorporating some animal products back into my diet for health reasons, so meatless monday has always been pretty easy for me. I love starting my morning with a smoothie though, it’s definitely my favorite!

    These look delicious. I’ve been a veggie since ’97 so am always looking for quick and easy meals that I can make on nights when I just don’t feel like cooking (because we all need a break now and then, right?)     We always have meatless Monday, but also only eat meat twice a week: one chicken dinner, and one beef. It works great for us. I do find that it’s hard finding vegetarian meals that my kids will eat, but I’m slowly learning what works and what (definitely) doesn’t work.

      haha. I am sure they are not quiet about what doesn’t work. Kids are fun. I love that you only eat meat twice. That is a great compromise.

    Morningstar Farms are my absolute favorite veggie protein brand. I use their veggie crumbles in EVERYTHING. Last week, I was throwing them in salads. This week, they’re in my butternut squash dish. They’re so versatile!

    I am vegan and I used to eat Morningstar before I found out I was gluten intolerant. They have great products, I just wish they had gluten free options.
