Colton and I try to reduce our carbon footprint by eating vegetarian once a week, or “Meatless Mondays”. Not only do we eat more vegetables, we try new foods and help the planet as well.
Mondays can be difficult, if you don’t plan accordingly. Since I work full time, I make sure I pack all of my meals the night before. If you are hesitant about meatless Mondays preparation, don’t be. Eating vegetarian doesn’t mean you have to spend hours cutting vegetables and meal prepping. Meatless Monday meal plan
Meal 1 (breakfast)
Options: fruit smoothie, smoothie bowl, or protein pancakes
Meal 2 (morning snack)
Fruit: apple, orange, or grapefruit
Meal 3 (lunch)
These veggie bowls are the perfect lunch for on the go. I love that I can just throw it in my lunch bag and take it to work. There are several different flavors to choose from (including Chik’n Pot Pie, Chik’n Tikka Masala, Italian Sausage Bake, Japanese Soba Noodles, and Moroccan Medley), so you don’t have to eat the same thing every time.
Growing up, one of my favorite meals to eat was chicken pot pie. Finally, there is a version out there that is low in calories and healthier. The “chicken” is 100% vegan chik’n strips that are lightly seasoned, low in calories, and full of protein. It takes just a few minutes to make in the microwave, which is perfect for my limited lunch schedule at school.
I found the chik’n pot pie veggie bowl at Walmart in the freezer section. There is a separate “vegetarian section” full of MorningStar veggie bowl flavors and favorites.
