Did you know that it takes more land, fossil fuel and water to produce one pound of animal meat vs one pound of soy?  By reducing the amount of meat we eat, we can help reduce pollution, rain forest destruction, and save water (Chooseveg.ca).  Colton and I try to reduce our carbon footprint by eating vegetarian once a week, or “Meatless Mondays”.  Not only do we eat more vegetables, we try new foods and help the planet as well.

Mondays can be difficult, if you don’t plan accordingly.  Since I work full time, I make sure I pack all of my meals the night before.  If you are hesitant about meatless Mondays preparation, don’t be.  Eating vegetarian doesn’t mean you have to spend hours cutting vegetables and meal prepping.  There are a ton of great options out there including MorningStar Farms® Veggie Bowls , and I promise you won’t even miss the meat.  Give this Meatless Monday meal plan a try.

Meatless Monday meal plan

Meal 1 (breakfast)

Options: fruit smoothie, smoothie bowl, or protein pancakes

Meal 2 (morning snack)

Fruit: apple, orange, or grapefruit

Meal 3 (lunch)

These veggie bowls are the perfect lunch for on the go.  I love that I can just throw it in my lunch bag and take it to work.  There are several different flavors to choose from (including Chik’n Pot Pie, Chik’n Tikka Masala, Italian Sausage Bake, Japanese Soba Noodles, and Moroccan Medley), so you don’t have to eat the same thing every time.

Growing up, one of my favorite meals  to eat was chicken pot pie.  Finally, there is a version out there that is low in calories and healthier.  The “chicken” is 100% vegan chik’n strips that are lightly seasoned, low in calories, and full of protein.  It takes just a few minutes to make in the microwave, which is perfect for my limited lunch schedule at school.

I found the chik’n pot pie veggie bowl at Walmart in the freezer section.  There is a separate “vegetarian section” full of MorningStar veggie bowl flavors and favorites.

Try it for yourself

You can do your part to help the environment and reduce your carbon footprint by adding a meatless Monday to your schedule.  Thankfully, MorningStar Farms makes eating a vegetarian diet convenient and delicious.  If everyone ate a vegetarian diet one day a week, the impact on water saved alone would be huge.  Try out their Veg Effect calculator to see what impact you can have.  Take it from me, you don’t have to be a vegetarian to enjoy meatless Monday.

I am (mostly) vegetarian. I still eat eggs and fish and I’ve started incorporating some animal products back into my diet for health reasons, so meatless monday has always been pretty easy for me. I love starting my morning with a smoothie though, it’s definitely my favorite!

    • Jessica November 18, 2016 at 6:59 pm

Me too! It’s quick, convenient, and delicious!

  • Charlotte November 15, 2016 at 11:20 am

These look delicious. I’ve been a veggie since ’97 so am always looking for quick and easy meals that I can make on nights when I just don’t feel like cooking (because we all need a break now and then, right?) Thanks so much for sharing–I’ll have to look for these next time I go grocery shopping 🙂

    • Jessica November 18, 2016 at 7:02 pm

Wow! I am always so impressed with vegetarians. This is a great alternative to cooking. I hope you enjoy them!

We always have meatless Monday, but also only eat meat twice a week: one chicken dinner, and one beef. It works great for us. I do find that it’s hard finding vegetarian meals that my kids will eat, but I’m slowly learning what works and what (definitely) doesn’t work.

    • Jessica November 18, 2016 at 7:06 pm

haha. I am sure they are not quiet about what doesn’t work. Kids are fun. I love that you only eat meat twice. That is a great compromise.

  • Lecy | A Simpler Grace November 15, 2016 at 1:22 pm

This looks really yummy! I love that there are more options for meatless-eaters who still want a substantial meal without it tasting like cardboard. Thanks for sharing!

    • Jessica November 18, 2016 at 7:10 pm

Haha. Yes! Exactly. Of course, I hope you try it and enjoy it!

Morningstar Farms are my absolute favorite veggie protein brand. I use their veggie crumbles in EVERYTHING. Last week, I was throwing them in salads. This week, they’re in my butternut squash dish. They’re so versatile!

    • Jessica November 18, 2016 at 7:14 pm

Yumm!! I can’t wait to try everything. Those sounds great.

  • Michelle November 15, 2016 at 5:25 pm

Morningstar Farms has such a great selection and variety of meatless foods for every meal of the day. Their website also has coupons for those of us that clip 🙂

    • Jessica November 18, 2016 at 7:17 pm

Yes! They do have a ton of great coupons!

  • Willow November 16, 2016 at 10:28 am

I am vegan and I used to eat Morningstar before I found out I was gluten intolerant. They have great products, I just wish they had gluten free options.

    • Jessica November 18, 2016 at 7:21 pm

Maybe that will be the next step. 🙂 Sorry they don’t have anything you can eat right now.

  • Elizabeth Rishel November 16, 2016 at 4:33 pm

I’ve never tried Morningstar! Your post makes me want to go out and try it! Yum!

    • Jessica November 18, 2016 at 7:24 pm

It’s so good! I hope you try it and love it!

  • Maggie Unzueta November 17, 2016 at 11:43 am

Yes. Yes. and YES to more meatless meals. Thanks for the ideas.
