Recipe: Chicken Taco Rings

In high school nutrition and food science, everyone was so excited for the last few weeks of school because we would get to make taco rings. These quickly became a favorite recipe of mine because they were quick and easy.  This dish can be thrown together with just a few simple ingredients; taco meat, seasoning, and crescents.  I decided to put a spin on the classic taco ring recipe and came up with these delicious chicken taco rings.

We had some friends over this weekend, and I tried it out for the first time on them.  This new recipe was a hit and I was excited! It requires more ingredients than the original version I made in high school, but this recipe is still fairly easy.

Ingredients

(For the crock pot)

1 lb chicken
1 jar of salsa
1 package of taco seasoning
1-2 diced garlic cloves

(for the skillet)

1 onion
1 red bell pepper
1 green bell pepper

(for the oven)

2 packages of crescent rolls
shredded Mexican cheese blend

Steps

1. Place chicken in crockpot 2. Pour salsa over the chicken 3. Add seasoning and garlic 4. Cook on low for 6-8 hours (or high 4-5 hours) 5. Chop onions, red and green bell pepper 6. Cook on skillet until softened 7. Break apart chicken in crock pot using two forks 8. Add vegetable mix to chicken (I let mine simmer in chicken mix in the crockpot for about an hour but you can do the next steps right away) 9. Preheat oven to 350 degrees 10. Spray pan with cooking oil 11. Separate crescent rolls out.  12. Scoop large spoonful of chicken mixture onto bottom (base part of triangle) of roll 13. Add grated cheese and roll the tip of the triangle to the base and tuck it under 14. Bake for 12-16 minutes, or until crescent rolls begins to turn brown 15. Remove from oven and let set for 5 minutes before serving. Top with sliced avocado and salsa.

You can serve the salsa inside a hollowed out bell pepper.

    Crockpots are my jam! They make my life so easy. These look amazing!! I feel like crescent rolls are the go to for fun and easy things to make in the kitchen.
