Every month, Urban Rio in Plano hosts a themed cocktail dinner.  I am a huge fan of craft cocktails and delicious food, so these events are right up my alley.  Not to mention, Urban Rio is right down the street from us.  After months of including these dinners on my north Dallas food and fitness events lists, Colton and I were finally able to make the December holiday cocktail dinner. I am so glad we did!

About Urban Rio

Urban Rio is one of my favorite restaurants located in downtown Plano. In fact, I shared a copycat recipe of one of my favorite menu items a few months ago.  Executive Chef Salvatore Gisellu has created a beautiful menu featuring a variety of Mexican flavors.  He makes every menu item with the most authentic and fresh ingredients.  They also have some of the best happy hour deals.

About the dinners

Urban Rio and Chef Salvatore Gisellu have cultivated a fun and relaxed atmosphere to enjoy a gourmet 5 course meal, partnered with some of the most delicious cocktails in Plano for only $39.90.  We sat with three other couples at a table for 8, and had a great time getting to know everyone between courses.  The chef explained the inspiration behind each dish in the five courses.

Course 1: Red pozole, grilled corn, and kale soup + Holiday sipper (strawberry hibiscus margarita)

Course 2: Roasted pear and walnut salad, blue cheese, cranberry chipotle vinaigrette + CranPear Bellini

This isn’t your tiny, sample size 5-course meal.  As if a full size soup and salad were not enough, we still had several more courses to go.

Course 3: Citrus-roasted turkey empanada, cream, dry fig chutney + Fig smash

Course 4: Carne asada, ham, grilled pineapple, orange, and maple sweet potato + Jingle juice

Just when I thought I couldn’t fit any more into my stomach, they brought out dessert.  Believe me, you will want to pace yourself in order to enjoy every drink and course, including dessert.

Course 5: Salted Mexican blondie and almond gelato + Salted caramel white Russian

Next month, start 2017 off right with the Skinny Cocktail Dinner on January 17 at 6:30. Reservations are required and can be made by emailing kali@urbanrio.com.

Every guest receives a menu with the cocktail recipes on the back.  Today, I am sharing one of my favorite cocktails from the list, the CranPear Bellini.

CranPear Bellini recipe

This is the perfect cocktail to have at your Christmas gatherings.  It requires few ingredients, and tastes great with almost everything!  This was one of my favorite drinks of the night, and I am happy to share the recipe with you.

Ingredients

1.5 oz. white cranberry juice
1.5 oz. pear nectar
Champagne
Cranberry (for garnish)

Steps

Combine cranberry juice and pear nectar in shaker with ice.  Strain into cocktail glass.  Top with champagne and add cranberry for a pop of color.

      You can get it in the juice aisle, or sometimes the “hispanic foods” aisle. You can also use the juice from canned peaches if your grocery store doesn’t have it. 🙂

    Yum! And I love that it’s white. White cocktails are so chic to me. Can’t wait to try this but also that salted caramel white russian sounds decadent! I’ll have to try my hand at making that one 😉
