It’s HOT outside.  I know I am stating the obvious, but I got used to the weather being in the 80s in Greece. Coming home to the Teas heat and humidity was a bit of a shock. Right before I left for our vacation, I grabbed a popsicle mold so that I could create yummy popsicle recipes to fight this heat when we returned.

One of Colton and my favorite places to visit in the summer is Steel City Pops.  This was the first place I heard about “creamy” popsicles.  Rumor has it we may get one in north Dallas. Until then, I am going be creative and make my own.

Today I bring you my first creation: a vegan chocolate peanut butter cup popsicle recipe.  Yields 4 pops.

Ingredients

1 C unsweetened almond milk
1 scoop chocolate protein powder (if making vegan, use plant-based powder)
1 tsp. cacao powder
1 banana
2 Tbl natural peanut butter
1 tsp. agave (or agave+maple blend)
Dash of cinnamon

Optional Chocolate coating
1 Tbl. cacao powder
1 Tbl. melted coconut oil
1 tsp. agave (or agave+maple blend)

Steps

1. Blend all ingredients together to make a smooth mixture. 2. Pour into molds (I linked some great ones at the bottom of this post) 3. Freeze for at least 5 hours, but better if you freeze overnight

Optional chocolate coating: Mix cacao powder, coconut oil, and agave together until smooth to form sauce.  Dip half of frozen popsicle in the sauce and place on a sheet of wax paper on plate.  Repeat with remaining pops.  Place wax- covered plate in the freezer until chocolate hardens and popsicle refreezes (about an hour).
