A couple of months ago, I shared about how I am incorporating meatless Mondays into my weekly schedule. Even though I am not a vegetarian, I have found great vegetarian recipes and products I love. One of my favorites is MorningStar Farms®. They have many Vegolutions that make it easy to add in vegetarian swaps to my regular diet and help me stay on track with Meatless Mondays.

Sizzling fajitas are a Texas favorite.  It’s one of my favorite things to order when we go out to eat at Mexican food restaurants.  When I saw MorningStar Farms® Meal Starters® Chik’n Strips and Meal Starters® Steak Strips at Walmart, I knew I had to try vegetarian fajitas!  I turned it in to a Mexican themed night and even made mango margaritas to go with them.

Vegetarian combo fajitas

Ingredients

1 Tbl olive oil
Sliced onion
Bell peppers, sliced- I used 1 red, 1 green
1 pkg MorningStar Farms Chik’n Strips
1 pkg MorningStar Farms Steak Strips
1/4 lime

Tortillas

Optional toppings: Mexican blend cheese, guacamole, salsa, and sour cream (lighten it up with Greek yogurt instead)

Steps

1. Heat olive oil in skillet on medium heat. 2. Add onions and bell peppers and cook for 10-15 minutes, until vegetables begin to soften. 3. Add chik’n and steak strips and cook for an additional 7 minutes (or until heated through) * 4. Squeeze lime over skillet to make it sizzle and serve immediately.

* To save time, you can heat up the chik’n and steak in the microwave and mix in with the vegetables just before serving.  MorningStar Farms meals comes pre-cooked, so it is easy to save time for busy people like me.

Skinny mango margaritas

Ingredients

Great Value™ frozen mango chunks
3/4 C sparkling/tonic water
1/2 C fresh squeeed orange juice
Juice from 2 limes
1 Tbl agave nectar sweetener

Optional: margarita salt for the rim

Serves 4

1. Add all ingredients to a mixer and blend until smooth. 2. Rub lime around the edge. 3. Run edge of glass along salt to rim 4. Pour mix in glass.

    I am veg and never used those strips for fajitas! Need to try! I usually do portobello mushrooms. Also I loved the Trader Joe’s mango Marg mix this summer but they don’t have it in the winter can’t wait to make those!

      My husband loves mushrooms, but I am not a fan. You should try it with these, they work great!

    Morningstar Veggie Crumbles are my go-to when I’m feeling ultra-lazy! I’ll just throw them in a pan and toss them into a salad or add in some frozen veggies. I love them!

    I love Mango Margaritas, and yours sounds wonderful! The fajitas sound great too! I am vegan and gluten free. I wish Morning Star Farms had gluten free products.
